About the Role
Join the iconic Hotel del Coronado as a Senior Sous Chef and lead our culinary team in delivering exceptional dining experiences. This Senior Sous Chef role offers a unique opportunity to work in one of the last surviving wooden Victorian beach resorts, recently renovated with a $400M investment. Located on Coronado Island, just minutes from Downtown San Diego, this stunning property features over 750 rooms and 10 diverse food and beverage outlets.
What You'll Do
- Oversee all culinary functions, ensuring exceptional food quality and driving menu innovation.
- Manage food and labor costs through effective forecasting, purchasing, inventory control, and waste reduction.
- Lead full-cycle recruitment efforts, including hiring, onboarding, training, and performance management.
- Create and manage team member schedules to ensure optimal staffing levels while controlling labor expenses.
- Establish and maintain standardized recipes and preparation methods to ensure consistency across all outlets.
- Ensure compliance with health, sanitation, and food safety regulations.
- Monitor kitchen equipment and coordinate maintenance to support uninterrupted operations.
- Analyze operational performance and implement process improvements to increase efficiency and profitability.
Requirements
- Proven experience in luxury hotels, with a strong background in culinary operations.
- Experience leading a unionized team is preferred.
- Demonstrated ability to manage multiple outlets effectively.
- Strong leadership skills with a focus on mentorship and team development.
- Excellent communication and interpersonal skills.
- Ability to work in a fast-paced, high-volume environment.
- Commitment to maintaining the highest standards of safety, consistency, and efficiency.
